What's for lunch

todays' lunch....




fruit - kiwi

veggies - cauliflower & carrots

grains and protein - lentils & brown rice






Recipe for Lentils and Brown Rice

1 cup short-grain brown rice (not instant)
2 1/2 cup veggie or chicken broth
2 medium carrots, peeled and chopped
1/2 cup dried lentils
1 tbsp olive oil

*combine all ingredients in a medium saucepan
*bring to a boil
*reduce heat, cover pan, and simmer on low for 40-50 minutes
*turn off heat, let sit 5 minutes, then fluff and serve

I love this recipe. It is simple to make and the whole family enjoys it.
