Here is a quick and simple recipe for barley pilaf.
1 1/3 cup chicken broth
2/3 cup barley
1 Tbsp olive oil
1/2 cup chopped carrots
1/2 cup chopped celery
1 clove garlic, minced
1/2 cup chopped mushrooms
1/4 cup chopped onion
*stir in the barley, cover and reduce heat to medium and simmer for 12 minutes (or until tender)
*in a large skilled, heat oil over medium-high heat
*add carrots, celery, garlic, onions. cook for 2-3 minutes
*add mushrooms. continue cooking for 1 minute
*add the cooked barley. mix well.
